This specialized soy sauce came from the inspiration of the company’s current president, a self-proclaimed connoisseur of “raw egg served over rice.” It drew major media attention at the “Egg Over Rice Symposium” – a unique event convened in October 2005 in the Yoshida Village area of Unnan City, Shimane Prefecture. Created by blending traditionally brewed soy sauce with dried bonito and Hidaka kelp from Japan’s main northern island of Hokkaido, providing the key to the savory flavor element christened “umami”. Added as a “secret ingredient” is domestically harvested oyster extract. This mellow yet faintly sweet seasoning shines as a gourmet accompaniment for raw eggs served over hot rice, fried eggs, omelets and other egg-based dishes. It is also a scrumptious choice for use on fried and boiled dishes, as diluted hot pot stew and noodle soup bases and numerous other culinary applications.
