“Hassaku Daifuku” (soft rice cakes filled with sweet bean jam), contain generous slices of hassaku oranges in their natural state. The brainchild of a long-standing sweets maker, these rice cakes harness the sweet and tart flavors of the fruit, then further enhanced with a touch of acidity. To achieve charming compatibility with the hassaku, the fruit is encased in layers of delightfully sweet green bean and glutinous refined rice flour paste. Both pastes are created through bean jam production techniques carried on since the Edo Period (1603-1868). Each cake is then hand packaged in adorable wrapping paper modeled after hassaku, emerging as rich and refreshing masterpieces in the proud tradition of the “Toraya” sweets shop.
